This dish is delicious and SO easy to prepare. With only a handful of ingredients you can have a healthy and fresh meal you don't have to feel guilty about!

Cook time: 5 minutes
Serves 2 people
Ingredients:
6 cups- Fresh Spinach
1- Roma Tomato
1- English Cucumber
1/2 cup- Feta Cheese
1- Ahi Tuna Steak about 6-8 oz (sashimi quality is best but not required)
Salt
Pepper
Extra Virgin Olive Oil
1) Rinse all the vegetables thoroughly.
2) Cube the roma tomato into cubes about 1/4" big.
3) Cut the English cucumber, first in slices then cut each of the slices into four strips.
4) In a skillet, add about a teaspoon of extra virgin olive oil. When heated, add the 6 cups of spinach and lightly saute just enough to warm and lightly wilt the leaves.
5) Quickly remove the spinach so it does not over cook and split evenly onto two separate plates. In the same skillet, if needed add another teaspoon of olive oil.
6) Lightly season the Ahi with a little salt and pepper, personally I like to use sea salt and cracked pepper in grinders.
7) Ahi is best cooked medium, but if you prefer to have it fully done, be sure not to over cook it and dry it out. The fish should be seared on one side, for about 2 min, then flip it over and do the same to the other side. This depends on the thickness of the fish, so watch carefully.
8) Remove the fish from heat, allow to sit for a minute. Carefully cut the fish into thin slices, going with the grain so you don't cause it to flake apart.
9) Assemble the salad as follows: wilted spinach on bottom, diced tomatoes and cucumber all over, tuna slices, and sprinkle about 1/4 of feta over the top. No dressing necessary. Enjoy!!
